What is rice flour and tapioca flour? Where to buy rice flour and tapioca flour?

  • Rice flour is a type of flour made by finely grinding rice grains after soaking them in water, unlike rice starch (soaking rice in an alkaline solution). Rice flour is divided into three types: regular rice flour, glutinous rice flour, and brown rice flour. Rice flour is commonly used to make rice noodles, bánh canh, bánh bò, bánh đúc,…
  • Tapioca flour is a type of flour made from the starch of cassava roots. Due to its elasticity, it is often used in cooking to make various types of jelly, type of chè, dumplings,… Depending on the region, tapioca flour may have different names, such as arrowroot flour, sago flour, or filter flour.

How to make Bánh mướt from rice flour

  • Prepare the ingredients

    Add 200g of rice flour, 100g of tapioca flour, and 1 spoon of salt into a bowl and mix well, then add 600ml of water to the flour mixture and stir well until the flour is dissolved in the water, then let the mixture rest for at least 1 hour.

    Remove the roots from the green onions, wash them thoroughly with water, place them in a basket to drain, and then chop finely. Wash the shallots, crush them, and chop finely.

  • Making rice paper

    Before making the rice paper, add chopped green onions and 1 tablespoon of cooking oil into the bowl of flour and mix well. Heat a pan on the stove, then scoop the batter into the pan, shaking the pan to spread the batter evenly across the surface. Each time you scoop the batter, be sure to stir the bowl of batter well to avoid having a thick layer settle at the bottom while the top remains thin.

    Cover the pan for about 2 minutes, keep the heat low, and wait for the batter to turn translucent, indicating that the rice paper is cooked. Transfer the rice paper to a cutting board and roll it up, continuing to make rice paper until all the batter is used.

    Tip: To prevent the rice paper from sticking to the cutting board, you should apply a little cooking oil to the surface of the board before rolling.

  • Fried Shallots

    Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the shallots and fry until fragrant and golden crispy, then sprinkle the fried shallots on top of the rice flour cake.
